Kate’s Succulent Roast Lamb

*2.7Kg Leg of Spring Lamb

*Freshly chopped Garlic

*Rosemary

*60g Butter

*Salt & Black Pepper

*Sprinkle of Nutmeg

*Squeeze of Lemon Juice

 

Heat your Wildcat Wood Fired Oven to 220oC

Place Lamb in a baking dish on a rack over water on the base of the oven.

This size roast will take approx. 2.5 hours depending on how well done you like your Lamb.

Serve with Italian vegetables (recipe to follow) and gravy.
