Last Sunday I cooked a Rosemary and garlic Leg of Lamb in the oven and have some meat leftover. So tonight I thought I would make…………………

Leftover Lamb & Fetta Pizza.

1 Qty Pizza Dough

1 Qty Pizza Sauce

Left over Roast Lamb, Sliced/Chopped.

Pitted Kalamata olives

Fetta cheese, crumbled

Rocket leaves

Lemon Juice

Olive Oil

Black Pepper to taste

Heat oven to 250oC

Roll out 2 30cm Pizza Bases and spread with the tomato sauce.

Top with the Lamb, Olives, Rocket and Fetta.

Drizzle Olive oil and Lemon juice over the top and finish with Black pepper.

 

We are going to accompany this with a lovely glass of Cabernet Merlot.
