6 Lamb Shanks

1 Large Onion

2 Tsp Curry Powder

Olive Oil

Large tin canned tomatoes

2 Cups Beef Stock

 

Heat oil in a large pan, add onion and curry

powder, cook for 2-3 minutes.

Add the Lamb shanks to brown off.

Add Tomatoes & stock, place in oven

for 2 hours. (Oven 180-200c)

Add your choice of vegetables for another

hour.

Serve with creamy mashed potatoes.
