Fresh whole roasting chicken

 Stuffing

½ Cup Fresh bread crumbs

½ Small onion finely chopped

¼ Tsp Mixed herbs

Small orange, ½ peeled and segmented

½ Squeezed for juice

Enough water to make moist

Salt & Black pepper to taste

Glaze

2 Cloves of Garlic crushed

2 Tblsp  Olive Oil

Thyme

1 Tblsp Lemon juice

Stuff the chicken

Paint the Glaze over the chicken with a basting brush

Cook in your Wildcat Wood Fired Oven at approx 200C for 1½ Hours

Basting each ½ hour.

Cook your baked vegetables in the oven at the same time.
